FLOWER-POT  DIRT  CAKE
 
 

1 package of oreo cookies
8 ounces cream cheese, softened
4 tbsp. butter, softened
1 cup confectioners sugar
2 (3-4 oz.) pkgs. instant vanilla pudding mix
3 1/2 cups cold milk
1 (12 oz.) carton of frozen whipped cream
 

IN A FOOD PROCESSOR OR BLENDER,
CRUSH COOKIES UNTIL FINE. SET ASIDE.
IN A MIXING BOWL, BEAT CREAM CHEESE,
BUTTER, AND SUGAR UNTIL SMOOTH. IN
ANOTHER BOWL, MIX PUDDING AND MILK
UNTIL WELL BLENDED. FOLD INTO CREAM
CHEESE MIXTURE. FOLD IN WHIPPING
CREAM(TOPPING) IN THE FLOWER POT.
ALTERNATE LAYERS OF COOKIE CRUMBS
AND PUDDING MIXTURE, ENDING WITH
CRUMBS. CHILL SEVERAL HOURS OR
OVERNIGHT. DECORATE TOP OF FLOWER POT
WITH GUMMY WORMS, FLOWERS, ETC.

BETTIE  LOU, MY  MAMA, WAS  A
WONDERFUL  COOK !
 

4 Cups of Flour
2 tsps. salt
1 tsp. sugar
1 3/4 cup Crisco
 

MIX ABOVE INGREDIENTS TOGETHER.
THEN MIX:

1/2 cup cold water
1 whole egg
1 tablespoon vinegar

MIX WELL AND POUR OVER FLOUR MIXTURE UNTIL
ALL IS MOIST. THEN MOLD WITH HANDS AND
PLACE IN A COVERED BOWL. CHILL AT LEAST
15 MINUTES BEFORE ROLLING.

BETTIE  LOU'S  FAMOUS
COCOA  FUDGE !
 

2/3 cup Hershey's Cocoa
3 cups sugar
1/2 teaspoon salt
1 1/2 cups milk
1/4 cup butter or margarine
1 teaspoon vanilla
 

COMBINE COCOA, SUGAR AND SALT IN
4 QUART SAUCE PAN; GRADUALLY ADD
MILK. BRING TO A BUBBLY BOIL ON
MEDIUM HEAT -STIRRING CONSTANTLY.
CONTINUE TO BOIL WITHOUT STIRRING,
UNTIL MIXTURE REACHES A TEMPERATURE
OF 234 DEGREES F. OR UNTIL SMALL BALL
FORMS WHEN DROPPED IN CUP OF COLD
WATER. POUR INTO BUTTERED FUDGE
PAN/SHEET. CUT INTO SQUARES WHEN
COOL.

PEANUT  BUTTER  CAKE
 
 

2 Cups of sifted all-purpose flour
1 1/2 cups sugar
2 1/2 tsps. baking powder
3/4 tsp. salt
1/2 cups of shortening, at room temperature
2/3 cups milk
2 Tblsp. peanut butter
 

SIFT DRY INGREDIENTS TOGETHER IN A LARGE
BOWL. ADD SHORTENING AND MILK. BEAT FOR
TWO MINUTES AT MEDIUM SPEED WITH ELECTRIC
BEATER. ADD EGGS AND MILK AND BEAT FOR 1
MINUTE. ADD PEANUT BUTTER TO MIXTURE AND
BEAT AT LOW SPEED UNTIL THOROUGHLY MIXED.
GREAT 2 EIGHT INCH CAKE PANS, LINED WITH
WAX PAPER. GREASE PAPER; SPRINKLE WITH FLOUR
AND SHAKE OUT EXCESS FLOUR. DIVIDE BATTER
EQUALLY AND BAKE AT 350 FOR 25 TO 30 MINUTES.

PECAN  PIE
 

3 Eggs slightly beaten
1 cup sugar
1 cup light Karo syrup
2 tbsp. margarine melted
1 tsp. vanilla
1 1/4 cup chopped pecans
1 nine inch unbaked deep pie crust

Preheat oven to 350 degrees

IN LARGE BOWL, STIR FIRST FIVE INGREDIENTS
UNTIL WELL BLENDED. STIR IN PECANS.
POUR INTO PIE CRUST.

BAKE 50-55 MINUTES OR UNTIL KNIFE INSERTED
COMES OUT CLEAN.

BANANA  PUDDING
 

6 Bananas
Box of Nabisco Vanilla Wafers
1/2 cup sugar
3 Tblsp. flour
Dash salt
4 egg yolks
2 cups milk
1/2 tsp. vanilla
 

MIX DRY INDREDIENTS. SEPERATE
EGGS. SLIGHTLY BEAT, SET ASIDE.
POUR MILE IN A HEAVY POT, OVER
LOW HEAT. SLOWLY ADD EGG YOLKS
AND MIX WELL. ADD DRY INGREDIENT.
STIR UNTIL VERY THICK. THEN ADD
VANILLA. COOL 5 MINUTES.

POUR ONTO LAYER OF COOKIES IN LARGE
CASSEROLE DISH. PUT THINLY SLICED
BANANAS IN A THIN LAYER ON TOP OF
COOKIES, THEN POUR A SMALL AMOUNT
OF PUDDING ON TOP OF LAYERS. REPEAT
LAYERS.

1 PACKAGE OF DUNCAN HINES-
DOUBLE FUDGE BROWNIE MIX
(23.7 OZ. PKG.)

1/3 CUP WATER
1/4 CUP COOKING OIL
2 EGGS
 

TOPPING:

1 1/2 CUPS OF M & M'S
1 1/2 CUPS MINIATURE MARSHMELLOWS
1/2 CUPS CHOPPED PEANUTS, PECANS,
OR WALNUTS

PREHEAT OVEN TO 35O D. GREASE 10
TO 11 INCH PIZZA PAN. COMBINE
BROWNIE MIX, CONTENTS OF FUDGE
PACKET, EGGS, WATER AND OIL IN LARGE
BOWL. STIR UNTIL WELL BLENDED
(ABOUT 50 STROKES)
SPREAD ON PIZZA PAN. BAKE FOR 20
TO 25 MINUTES OR UNTIL BROWNIE
BEGINS TO PULL AWAY FROM EDGE
OF PAN. REMOVE FROM OVEN.
SPRINKLE TOPPING INGREDIENTS
EVENLY OVER TOP. RETURN TO OVEN.
BAKE 5 MINUTES OR UNTIL MARSH-
MELLOWS BEGIN TO PUFF. COOL
COMPLETELY BEFORE SERVING.
MAKES 16 SLICES.

Cream  Puffs

4 eggs
1/2 cup butter
 1 cup boiling water
1/2 tsp salt
 1 cup flour

Combine butter, salt and water.
Heat to boiling. Sift flour & add to
boiling mixture. Beat until mixture leaves
sides of saucepan. Beat after the addition
of each egg until mixture is smooth. Drop by
tablespoons full onto well oiled cookie sheet,
 2 inches apart. Bake at 400 degrees for
30 minutes. Lower heat to 350 degrees and
continue baking 10 minutes, or until firm and
dry. Remove from oven and cool. After
addition of cream filling sprinkle with powdered
sugar.

Cream Filling

2 cups milk
2 egg yolks
2 tablespoons flour
1/2 cup sugar
pinch of salt

Heat milk in sauce pan on stove until
it almost reaches the boiling point.
Place flour, sugar and salt in a small bowl.
When heated milk is very warm add enough
milk to the flour mixture to make a paste.
Add beaten egg yolks to flour mixture and
beat after each addition. When milk is very
hot add flour mixture to hot milk. Cool over
medium heat until mixture thickens. When
filling mixture is cooled to room temperature
cut a small whole in top of each cream puff.
Fill with cream mixture and place cut out
portion back in place. Sprinkle filled
cream puffs with powdered sugar and
serve.

Oatmeal  Cake
 

1 cup quick oats
1-1/4 cup boiling water
1 cup white sugar
1 cup brown sugar
1/2 cup shortening
2 eggs beaten
1-1/3 cup sifted flour
dash salt
1 tsp. soda
1/2 tsp nutmeg
 

Soak oats in water that has boiled.
 Allow to soak for 20 minutes with
heat off.  Cream sugar and shortening,
and other ingredients and mix well.
Bake in greased and floured 9 X 13
pan 375 degrees for 35 minutes.
Add 1/2 package of chocolate chips
and 1 cup walnuts on top of cake after
you pour it into the pan to bake.
Serve with cool whip.

DIET  7-UP  SALAD
 
 

THIS RECIPE IS WONDERFUL FOR
PEOPLE LIKE ME WHO HAVE
HYPOGLAUCEMIA AND AREN'T SUPPOSED
TO HAVE SUGAR. -OR FOR ANYONE
WHO CAN'T HAVE MUCH SUGAR AND/OR
ARE ON A DIET.
 

8 1/2 oz. can of crushed pineapple
1 cup of hot water
One 4 oz. box of sugar-free Lime jello
One 8 oz. pkg. of light cream cheese
1 packet of equal sweetener
1 teaspoon of vanilla
7 ounces of diet 7-up

Drain pineapple, saving the juice. Add
enought hot water to the saved juice,
in a cup, to equal one whole cup. Bring
this liquid to a boil in a pot on the stove.
Then when it comes to a boil, pour it
into a blender and add the box of jello,
along with the package of cream cheese.
Then blend this mixture in a blender for
about two minutes. Then add into the
blender the packet of Equal sweetener,
along with the vanilla and the 7-up, and
blend on high for one minute. Then add
the pineapple and blend on low for one
minute. Then pour into a dish and chill
in the fridge for about three hours. It
doesn't matter if you pour this into a
covered dish or non-covered dish. I
always make a double batch of this recipe
so it will last longer ! This is one of my
favorite dishes to make.

Country  Blueberry  Coffee  Cake
 
 

1/4 Cup Packed Brown Sugar
1/4 Teaspoon Cinnamon
4 Frozen Biscuits
2 Tablespoons Melted Margarine
1/2 Cup Quick Cooking Oats
3/4 Cup Frozen Blueberries
2 Tablespoons Granulated Sugar
1 Tablespoon Melted Margarine

 
Heat oven to 375F. Generously grease 8x4 loaf pan.
 In small bowl, stir together brown sugar and cinnamon
with a fork. Thaw biscuits and cut into 1/4 sections.
 Dip each section into melted margarine; coat with the
brown sugar mixture. Arrange in single layer in pan.
Top with with any remaining sugar mixture and
margarine.
 Sprinkle with 1/4 cups oats. Top with the blueberries.
In medium bowl, stir together granulated sugar, remaining
oats and softened margarine. Sprinkle over the top of
the blueberries. Bake 30 to 35 minutes or until golden
brown and center is done.  Cool 15 minutes, serve.
